In midsummer, tiny green leaf hoppers bounce through special tea gardens creating a style of oolong called Bai Hao by nibbling on tea leaves and drawing sap, which begins the process of oxidation while the leaves are still on the bush. Bai Hao oolongs are so lovely that Queen Victoria coined the phrase “Oriental Beauty” to describe the highest grades. Smooth, subtle notes of soft wood, muscat grape, baked pear and lily-of-the-valley make this tea a delicacy.
